Today’s Von Bon Cookie reveal is a SWEET treat for everyone — of course I am talking about our best selling Sweet Potato cookies! A crowd favorite, these desserts are equally healthy as they are tasty. Both vegan and gluten free, these snacks are great for school events, dietary restrictions, or just something nice to have at home with the family. Let’s go through how you can make these treats in your own kitchen.
First let’s go over the ingredients you will need:
—3/4 cup cooked, mashed sweet potato
—1/2 cup maple syrup
—1/2 cup almond butter
—1 tsp vanilla extract
—1 tsp cinnamon
—1/2 cut brown sugar
—1 cup dried cranberies
—1 tsp baking soda
—marshmallow spread (optional)
These are the main ingredients I use in the kitchen but you can also add chocolate chips, substitute the maple syrup with raw honey (though honey wouldn’t be vegan), or banana if you want to mix things up.
Now that you have all of the ingredients ready, here are the next steps you take during this cooking adventure.
First, you pre-heat the oven to 350 degrees and line a baking tray with parchment paper. If you do not have any parchment paper you can also use non-stick cooking spray to cover your baking tray.
Next you add the sweet potato, maple syrup, almond butter, and vanilla together into a large mixing bowl. Manually or electronically, stir these ingredients well until everything is combined and relatively smooth.
Then you add the rest of the ingredients into that same large mixing bowl and stir till the dough is thick and sticky.
Once that is done, you will want to use a cookie scoop (a spoon also works) to scoop 14 evenly-sized clumps of dough onto the the tray. Press each cookie down a little because they will not spread or change shape during baking.
Bake the cookies for 16 minutes then let cool on the pan for at least 20 minutes. The cookies will be quite crumbly when they come out of the oven so it’s important to let them cool and firm up.
Lastly, you may choose to take a knife and lightly spread some Fluff or melted marshmallow across the cooled cookies for a bit of an extra sweet taste.
