Today’s Von Bon Cookie reveal is none other than our delicious dessert—the Raspberry Thumbprint Cookie with Icing. This treat is a favorite amongst our customers and for good reason. It combines the sugary taste of a cookie with the sweet taste of a raspberry—a perfect match!
First, let’s go over the ingredients you will need to prepare the dough:
—1 cup butter
—3/4 cup sugar divided
—1 teaspoon vanilla extract
—2 cups wheat flour
—1/4 teaspoon salt
—2/3 cup seedless raspberry jam
Next are the ingredients you will need to make the icing:
—1/2 cup confectioners’ sugar
—1/2 teaspoon vanilla extract
—1 1/2 teaspoons water
Now that you have all of the ingredients ready, here are the next steps you take during this cooking adventure.
First, you pre-heat the oven to 350 degrees and line a baking tray with parchment paper. If you do not have any parchment paper you can also use non-stick cooking spray to cover your baking tray.
Next, take a mixing bowl and add wheat flour and salt into it. Stir until the ingredients are well mixed. When you are ready, add in the butter, granulated sugar, and vanilla extract to the same bowl.
Once that is done, you will want to use a cookie scoop (a spoon also works) to scoop several evenly-sized clumps of dough onto the the tray. Then, you can use your thumb or the end of a spoon to make an indentation in the center of each ball.
Place the tray in the oven and bake the cookies for about 15 minutes or until the edges are slightly browned. While baking, place the raspberry jam into a small bowl and melt it in a microwave.
Once the cookies are baked, use a spoon to take the jam and put it into the indents of the baked cookies. The let the cookies cool for several minutes.
While the cookies cool, make the glaze icing by combining confectioners’ sugar, vanilla, and water until they are all mixed. Once the icing is fairly thick, you can then drizzle the icing over the cookies.
